Sausalito Chef Peter McNee Wins Cochon555 Chefs Competition
Cochon555 is a chef's competition and fundraiser held annually in major cities across the country to promote "artisan heritage pig farming." It wasn't an issue that motivated me until I thought about the competition, "Mass-produced pork from gigantic feed lots and slaughterhouses." Hurrah for artisan pigs, I cry!
Now that we realize that this is an important issue, all of us in Sausalito can feel good about this year's results on June 14 at the Fairmont Hotel in San Francisco. Chef Peter McNee of Sausalito's Poggio Trattoria was named "The Prince of Pork" at this year's event, beating out nationally acclaimed chefs Ryan Farr of 4505 Meats, Nate Appleman of A16, Staffan Terje of Perbacco, and Ravi Kapur of Boulevard.
If you don't mind a little butchering and a brief NSW (not-suitable-for-work) sequence, a video of the event is here.
